This is absolutely the finest French dish I have ever eaten. AND, I'm not fond of a lot of fish. I've noticed that the skin on Haddock is a bit salty; the chef has as well. As a result, he uses fish without the skin. It costs a bit more but boy is it worth it. I tried it over spinach and either spiach or pasta, it's wonderful. Now, that's all I order!
